What's the difference between Blossom and Heather honey?....

Our blossom honey comes from a variety of different early Spring flowering plants such as Raspberries, wild flowers, Field Beans and Oilseed Rape. It is pale yellow in colour with a very soft gentle bouquet. Many of our customers swear by it, saying that eating a spoonful of Blossom honey a day helps to alleviate their hayfever symptoms.

Our Heather honey is mono-floral. That means it comes from a single source, the Ling Heather ( calluna vulgaris ) that flowers in August. It is a much darker rich golden coloured honey with a very sweet distinctive taste. They say the darker the honey is the more anti-bacterial properties it has and many people believe this as they use Heather honey to help get rid of a sore throat or for any tummy bugs. I also had one customer recently tell me how perfect it tasted when they basted a whole salmon with our Heather honey then oven baked it. (Sounded delicious to me!)
